vegetable soup

Classic Vegetable Soup is a cozy, nourishing dish packed with tender garden vegetables simmered in a rich, herb-infused tomato-vegetable broth.

Ingredients

  • Aromatics: 1 medium yellow onion (diced), 2 medium carrots (sliced), 2 celery stalks (diced), and 4 cloves garlic (minced).
  • Vegetables: 2 medium Yukon Gold potatoes (cubed), 1 cup green beans (trimmed and cut), 1 medium zucchini (diced), and 1 cup sweet corn or peas (frozen or fresh).
  • Broth Base: 6 cups vegetable broth (or chicken broth), 1 can (14.5 oz) diced tomatoes, and 2 tbsp tomato paste.
  • Herbs & Seasonings: 1 tsp dried Italian seasoning, 1 bay leaf, 2 tbsp olive oil, salt and freshly ground black pepper to taste.
  • Finish: 1 tsp lemon juice (or apple cider vinegar) and fresh chopped parsley or basil.
1.Sauté Aromatics:Builds deep savory flavor base.

Heat 2 tbsp olive oil in a large Dutch oven or soup pot over medium heat. Add diced onion, carrots, and celery with a pinch of salt. Sauté for 6–8 minutes until soft and translucent, then stir in minced garlic and tomato paste for 1 minute until fragrant.
2.Add Liquids & Seasonings:Adds rich color and depth.

Pour in the vegetable broth and canned diced tomatoes with their juices. Stir in Italian seasoning, bay leaf, 1 tsp salt, and 1/4 tsp black pepper.
3.Simmer Starchy Vegetables:15 to 20 minutes.

Add the cubed potatoes and green beans. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 15 to 20 minutes until the potatoes are tender.
4.Add Zucchini and Corn:Prevents tender veggies from becoming mushy.

Stir in the diced zucchini and sweet corn (or peas). Simmer uncovered for an additional 5–7 minutes until all vegetables are tender.
5.Season and Serve:Brightens the flavor.

Remove the pot from heat and discard the bay leaf. Stir in 1 tsp fresh lemon juice to brighten the flavors, then adjust salt and pepper to taste. Serve warm garnished with fresh parsley.

Pro-Tips for Success

  • Acid at the End: Adding a splash of lemon juice or apple cider vinegar right before serving balances the rich broth and wakes up all the vegetable flavors.
  • Customize the Veggies: This recipe is extremely flexible—add kale or spinach in the final minute of cooking, or toss in canned chickpeas or white beans for extra protein.
