Slow cooker potato

Slow Cooker Loaded Potatoes are a rich, crowd-pleasing side dish featuring tender potato cubes slow-cooked in garlic butter, then topped with melted cheddar cheese, crispy bacon, and green onions.

Ingredients

  • Potatoes: 3 lbs Yukon Gold or Russet potatoes, washed and diced into 1-inch cubes.
  • Butter Base: 1/4 cup unsalted butter (melted) or olive oil.
  • Cheese: 2 cups freshly shredded sharp cheddar cheese (divided).
  • Toppings: 6–8 strips cooked bacon (crumbled) and 3 green onions (thinly sliced).
  • Seasonings: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1 tsp kosher salt, and 1/2 tsp black pepper.
  • Optional Finish: 1/2 cup sour cream (stirred in at the end for extra creaminess).
1.Prep the Potatoes:No need to peel Yukon Gold potatoes.

Dice 3 lbs of potatoes into uniform 1-inch pieces. Line your slow cooker with a liner or spray lightly with nonstick cooking spray.
2.Season and Toss:Ensures every piece is full of flavor.

Place the diced potatoes directly into the slow cooker insert. Drizzle with melted butter, then sprinkle with garlic powder, onion powder, paprika, salt, and black pepper. Toss well until evenly coated.
3.Slow Cook Until Tender:Low for 6–7 hours or High for 3.5–4 hours.

Cover and cook on LOW for 6 to 7 hours (or HIGH for 3.5 to 4 hours) until the potatoes are fork-tender and easily pierced.
4.Add Cheese and Bacon:Melt for 10–15 minutes.

Uncover and sprinkle 1.5 cups of cheddar cheese and half of the crumbled bacon over the top. Cover for 10–15 minutes until the cheese is completely melted and bubbly.
5.Top and Serve:Garnish right before serving.

Dollop with sour cream (if using), then top with the remaining cheddar, bacon bits, and sliced green onions before serving warm.
