Fruitcake is a dense, rich cake packed with candied or dried fruits, nuts, and warming spices, often soaked in brandy or rum for preservation.
Key Ingredients
-
Dried & Candied Fruit (3.5 to 4 cups total): Raisins, golden sultanas, dried cranberries, chopped dates, dried figs, and candied orange or lemon peel.
-
Nuts (1 cup): Chopped pecans, walnuts, or slivered almonds.
-
Spices: 1.5 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, and 1/4 tsp ground cloves.
-
Soaking Liquid: 1/2 cup brandy, rum, bourbon, or dark orange juice (for alcohol-free).
-
Batter Base: 2 cups all-purpose flour, 1 tsp baking powder, 1/2 tsp salt, 1 cup unsalted butter (softened), 1 cup dark brown sugar, 4 large eggs, and 2 tbsp molasses.
1.Macerate the Dried Fruit:Softens fruit and imparts rich flavor.
Combine all the dried fruit and nuts in a large bowl. Pour 1/2 cup of brandy (or orange juice) over the mixture. Cover and let soak for at least 12 hours (or overnight) at room temperature.
2.Prepare the Batter:Preheat oven to 300°F (150°C).
Grease a 9×5-inch loaf pan and line it completely with parchment paper. In a bowl, cream together softened butter and dark brown sugar until fluffy. Beat in eggs one at a time, followed by molasses. In a separate bowl, whisk flour, baking powder, salt, and spices.
3.Fold Fruit into Batter:Toss fruit in 2 tbsp flour to prevent sinking.
Toss the soaked fruit and nut mixture with 2 tbsp of flour until coated. Gently fold the dry ingredients and the coated fruit into the butter-egg mixture until just combined.
4.Slow Bake in the Oven:Bake for 2 to 2.5 hours.
Spoon batter into the lined loaf pan and smooth the top. Bake low and slow at 300°F (150°C) for 2 to 2.5 hours, or until a toothpick inserted in the center comes out clean. Cover loosely with aluminum foil halfway through if the top browns too quickly.
5.Cool and Feed (Optional Aging):Essential step for traditional fruitcake.
Cool completely in the pan. If aging, brush the cake with 1–2 tbsp of brandy, wrap tightly in parchment paper and foil, and store in a cool, dark place. “Feed” with a tablespoon of spirits once a week for 2 to 6 weeks.
Pro-Tips for Success
-
Low and Slow: Fruitcakes burn easily due to high sugar content in the dried fruit. Bake at a low temperature (300°F / 150°C) and wrap the outside of the baking pan in brown paper if your oven runs hot.
-
Prevent Sinking: Coating the soaked fruit in flour before folding it into the batter keeps the heavy fruit evenly distributed rather than sinking to the bottom.
